Pumpkin Red Bean Balls
INGREDIENTS
Ingredients For Pumpkin Dough:
250g Steamed Pumpkin, mashed
100g Glutinous Rice Flour
70g Tapioca Flour
¼ Teaspoon of Sea Salt
40ml Peanut / Corn Oil
30g Caster Sugar
Fillings:
240g Bake King Red Bean Paste
250g Fresh Grated Coconut
¼ Teaspoon of Sea Salt
Some Pandan Leaves
Pumpkin Red Bean Balls
- In a bowl stir in salt together with grated coconut till combined then place pandan leaves over it and steamed on medium heat for 5 minutes. Remove and set aside.
- Next divide red bean paste into balls of 10g each before working on the dough.
- Combine all dough ingredients together in a mixing bowl to form pumpkin dough. If the dough is too wet, dust it with more glutinous rice flour.
- Divide dough into small balls of 15g each.
- Take a portion of the dough, flatten and wrapped it with 1 portion of the red bean paste to form a ball shape. Set aside and repeat till all the red bean paste is used up.
- Cook pumpkin balls in boiling water for about 2 minutes till it changed colour and turns translucent.
- Remove, drain well and coat it with the prepared grated coconut before serving.
