Mantou (Chinese Steamed Buns)
INGREDIENTS
Taiwan All-Purpose Flour
(Delicate Low-Ash) 300g
Taiwan Cake Flour 140g
Caster Sugar 40g
Milk 305g
Bake King All Natural
Double-Acting Baking Powder 1tsp
Instant Yeast 1.5tsp
Mantou (Chinese Steamed Buns)
Directions:
Using a large bowl, mix all ingredients with a pair of chopsticks till the liquid is absorbed.
Hand knead or using a dough hook in a mixer, knead till a smooth dough is formed.
Cover with clingwrap and rest for 10mins.
With floured hands and working top, half the dough, roll out into a rectangle, fold lengthwise, meeting midway. Roll out the dough into a long strip, brush surface lightly with water, roll inwards lengthside to form a long cylindrical dough. Repeat with the other half.
Divide each portion into 10-12 pieces.
Place on greaseproof paper in a steamer and proof for 15 minutes.
In a cold steamer, start with medium fire. When the water boils and steam can be seen, turn down the fire to low and steam for 7-10minutes. Turn off the fire and rest for a minute before removing the steamer from the stove and remove the lid.
